Meet The Chef
Phillip, or Phil for short, trained at Chichester College where he developed his passion for creating theatre and modernist cookery. He started his career in local restaurants, training under Michelin starred chefs where he flourished during his time. He moved on, working for large hotel groups, such as Hilton, before joining us here at The Old Ship Hotel. Since April 2017, Phil has been mastering his art at the Wardroom (formally Steak On Sea Restaurant), ensuring that his team deliver the same passion about the food and service that he strongly believes is a credit to the hotel and restaurant.
The Mess Deck
Our drinks selection has been carefully crafted to perfectly complement each and every dish on our Mess Deck bar menu, with delicate wines and seasonal cocktails available to enjoy all year round, as well as a choice of renowned beers and ciders.
Be welcomed into The Wardroom where candle lit tables await, with some overlooking the scenery that Brighton is best known for. We also have a lounge bar and our outdoor terrace so you can make the most of the summer months.
